Marriott Hotels has undertaken a pioneering initiative aimed at significantly reducing food waste across 53 of its managed hotels in the United Kingdom, Ireland, and the Nordics. This effort, which harnesses cutting-edge Winnow AI technology, is part of Marriott’s broader strategy to bolster sustainability in the hospitality industry. By mid-2024, just six months after implementation, the company successfully decreased food waste by 25%.

The initiative marks Marriott as the first hotel group in the U.K. to deploy AI-based food waste technology across such a large scale. Winnow's AI platform provides Marriott’s Food & Beverage (F&B) teams with crucial, real-time data regarding food consumption and waste patterns. This data allows teams to make informed decisions on ordering, menu planning, and portion sizes, significantly reducing waste and maintaining exemplary guest service.

Anna Pazdera, the Executive Chef at Marriott Heathrow and a sustainability advocate, spoke about the impact, “Reducing food waste has been a priority for us for some time. The progress with AI has been incredible. The insights allow us to make immediate kitchen adjustments, reducing waste and providing opportunities to creatively use surplus ingredients.”

Guest engagement forms a pivotal part of the initiative, with Marriott Hotels offering smaller portion sizes and raising awareness about responsible dining practices, especially in buffet settings. Some hotels have introduced menu QR codes that direct guests to zero-waste recipes and tips for reducing food waste at home. Surplus food is donated to local food banks through partnerships with organisations like Too Good to Go, while remaining waste is channelled into composting or recycling.

Joanna Chugh, Area Vice President for UK, Ireland, and Nordics at Marriott International praised the collaborative effort of the F&B teams, stating, “We are incredibly proud of the tremendous effort and dedication of our teams. Over 3,000 team members have collaborated to achieve a 25% reduction in food waste, equivalent to preventing 486 tonnes of CO2 emissions or powering over 32 million mobile phone charges.”

David Jackson, Director of Marketing & Public Affairs for Winnow, commended the collaboration’s success, noting that this intersection of technology and Marriott’s dedication is setting new benchmarks within the hospitality sector.

Beyond food waste, Marriott’s sustainability commitments extend across various environmental concerns. All hotels in the aforementioned regions are Green Key certified—a distinction awarded for meeting strict criteria in energy efficiency, water conservation, waste management, and sustainability. This certification reinforces Marriott’s and the hospitality industry's commitment to preserving environmental resources while maintaining high service standards.

Through these initiatives, Marriott Hotels showcases the potential for technology-driven sustainability efforts in reducing the ecological footprint of the hospitality sector while continually offering premium experiences for its guests.
